- Acting Chef in Chef’s absence
- Take charge of ordering and receiving, making sure restaurant is never without proper product
- Receives product, diligently checks physical orders against invoices
- Aids in menu planning/development and executes changes within guidelines of Satchel’s brand
- Conducts pre/post service line checks and writes closing prep/order lists with line cooks
- Maintain clean and sanitary kitchen. Hold all kitchen team to highest standards and accountability to cleaning guidelines
- Participates in education of all kitchen team
- Maintains organized and orderly dry storage and coolers
- Conduct monthly inventory count with assistance from Chef
- Working knowledge of all kitchen stations
- Model sense of urgency and instill that in team
- Monitor all dishes leaving kitchen for quality, appearance
- Monitor food/labor costs to ensure within food purchase/labor budget
